1 kilogram of dried beans ( soaked overnight )
1 smoked ham
2 tablespoons oil
3 bay leaves
1 large white onion
1 tablespoon paprika
1 teaspoon oregano
1 teaspoon ground coriander seeds
1 teaspoon cumin
3 tablespoons tomato paste
1 tablespoon honey
salt and pepper
1. Boil knuckle simmered spumând occasionally , until the meat falls off the catch of bone. Once the meat is cooked , remove it from the juice to a boil and let it cool . Keep the juice of boiled meat .
2. In parallel to the bone , boil the beans in unsalted water until the beans are cooked halfway.
3. Chop the onion and cut carrot slivers . Brown the onion and carrot oil . Add the paprika and let it brown slightly . Be careful not to burn it !
4. Add the meat from the bone , cut into pieces suitable for large beans ( without the boiled water ) and cover it with the juice of boiled meat ( beans should be relatively the same fluid temperature ) . Add tomato paste, spoon of honey , bay leaves , coriander and cumin ground and let simmer until all ingredients are cooked. Season with salt and pepper.
